This creamy, smoky, and slightly spicy dip is a game day favorite that started as a happy accident. Made with cream cheese, cheddar, bacon, and jalapeños, it’s the perfect crowd-pleasing appetizer that disappears in minutes.

  • 1 cup sour cream
  • ½ cup mayonnaise
  • 2 cups shredded sharp cheddar cheese, divided
  • 1 cup shredded Monterey Jack cheese
  • 8 slices bacon, cooked and crumbled
  • ½ cup pickled jalapeños, chopped
  • 1 fresh jalapeño, thinly sliced for topping
  • ¼ cup green onions, sliced
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • ½ teaspoon salt
  • ¼ teaspoon black pepper

Instructions

  1. Preheat your oven to 375°F (190°C). Cook the bacon until crispy, then crumble into small pieces. Set aside a couple tablespoons for garnish.
  2. Soften the cream cheese by letting it sit at room temperature for 30 minutes or microwaving in 10-second intervals until soft but not melted.
  3. In a large bowl, combine the softened cream cheese, sour cream, and mayonnaise. Stir until smooth and well combined.
  4. Add the garlic powder, onion powder, salt, and black pepper. Stir to distribute evenly.
  5. Fold in 1½ cups of the shredded cheddar, all of the Monterey Jack cheese, the chopped pickled jalapeños, and most of the crumbled bacon (reserve some for the top). Mix gently until just combined.
  6. Transfer the mixture to a 9×13-inch baking dish and spread evenly with a spatula.
  7. Sprinkle the reserved ½ cup of cheddar cheese over the top. Arrange the fresh jalapeño slices on top, then add the reserved bacon bits and sliced green onions.
  8. Bake for 20-25 minutes, until bubbling around the edges and golden brown on top. For a browner top, broil for the last 2 minutes, watching closely.
  9. Let the dip rest for 5 minutes before serving.
  10. Garnish with remaining green onions and bacon bits. Serve warm with tortilla chips, crostini, or veggie sticks.

Notes

For best texture, use full-fat cream cheese and shred your own cheese. The dip can be assembled a day ahead and refrigerated; add fresh toppings just before baking. To reduce spiciness, use only pickled jalapeños and remove seeds from fresh jalapeños. For a milder version, substitute canned green chiles.
