  • 8 ounces cream cheese, softened
  • 1/2 cup buffalo wing sauce (such as Frank’s RedHot)
  • 1/2 cup ranch dressing (or blue cheese dressing)
  • 1/2 cup shredded cheddar cheese
  • 1/4 cup crumbled blue cheese (optional)
  • 1/4 cup sliced green onions (for garnish)
  • Tortilla chips, celery sticks, or carrot sticks for serving

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Shred your chicken. If using rotisserie chicken, pull the meat off the bones and shred with two forks. If cooking chicken breasts from scratch, boil them in salted water for 15-20 minutes until cooked through, then shred.
  3. Soften the cream cheese by cutting it into cubes and letting it sit at room temperature for 15-20 minutes, or microwave for 15-20 seconds on low power.
  4. In a medium mixing bowl, combine the softened cream cheese, buffalo wing sauce, and ranch dressing. Use a hand mixer on low speed or a sturdy spoon to blend until smooth and creamy.
  5. Fold in the shredded chicken, 1/4 cup of the shredded cheddar, and the crumbled blue cheese (if using). Stir until everything is evenly coated.
  6. Transfer the mixture to a greased 8×8-inch baking dish. Spread evenly and sprinkle the remaining 1/4 cup of shredded cheddar over the top.
  7. Bake for 20-25 minutes until bubbly around the edges and golden brown on top. For a deeper golden top, broil for the last 2 minutes, watching closely.
  8. Let the dip rest for 5 minutes. Garnish with sliced green onions and serve warm with tortilla chips, celery sticks, or carrot sticks.

Notes

For best results, use full-fat cream cheese and let it soften before mixing. Shred chicken while still warm for easier handling. The dip can be assembled the night before and refrigerated; add 5-10 minutes to baking time if starting from cold. For a slow cooker version, combine all ingredients and cook on low for 2-3 hours, stirring occasionally.
