  • ¼ cup cold unsalted butter, cut into small cubes
  • ½ cup chopped pecans or walnuts (optional, but highly recommended)

Instructions

  1. Preheat your oven to 350°F (175°C). Grease your 9×5-inch loaf pan thoroughly with butter or cooking spray, or line it with parchment paper, leaving some overhang on the long sides for easy removal.
  2. In your large mixing bowl, whisk together the flour, sugar, baking soda, baking powder, salt, cinnamon, nutmeg, cloves, and ginger until no lumps remain.
  3. Make a well in the center of the dry ingredients. Add the eggs, pumpkin puree, oil, water, and vanilla extract. Stir with a wooden spoon or spatula until just combined. Do not overmix; a few small lumps are fine.
  4. In a small bowl, combine the flour, brown sugar, cinnamon, and salt for the streusel. Add the cold butter cubes and cut them in using a pastry cutter or your fingers until the mixture resembles coarse sand with some pea-sized butter pieces remaining. If using nuts, stir them in now.
  5. Pour the batter into the prepared loaf pan and spread it evenly with a spatula. Sprinkle the streusel evenly over the top, gently pressing it into the batter so it sticks.
  6. Bake for 55 to 65 minutes. The bread is done when a toothpick inserted into the center comes out clean or with a few moist crumbs. If the streusel is browning too quickly after 40 minutes, tent the pan loosely with aluminum foil.
  7. Let the bread cool in the pan for 15 minutes, then transfer it to a wire rack to cool completely before slicing.
