  • 1/2 teaspoon vanilla extract
  • Pinch of salt

Instructions

  1. Mash the banana: In a mason jar or airtight container, add the ripe banana and mash with a fork until mostly smooth (a few lumps are fine).
  2. Add the wet ingredients: To the mashed banana, add the milk, Greek yogurt, peanut butter, and vanilla extract. Stir until the peanut butter is fully incorporated and no streaks remain.
  3. Add the dry ingredients: Pour in the rolled oats, chia seeds (if using), and a pinch of salt. Stir until everything is well combined. The mixture will look thin but will thicken overnight.
  4. Seal and refrigerate: Put the lid on the jar or container tightly. Refrigerate for at least 4 hours, but overnight (8-12 hours) is best.
  5. Serve cold or warm: In the morning, stir the oats. Eat cold straight from the jar or microwave for 45-60 seconds if you prefer warm oats. Add a splash of milk if too thick.
  6. Add toppings: Top with sliced banana, a drizzle of peanut butter, granola, or mini chocolate chips as desired.

Notes

Use a very ripe banana for natural sweetness. If your peanut butter is too thick, warm it for 10 seconds in the microwave before mixing. For a thicker texture, reduce milk by 1-2 tablespoons. Oats keep in the fridge for up to 5 days; do not freeze.
