  • 1 packet ranch seasoning mix

  • 1 tablespoon cornstarch
  • Optional: 1/4 teaspoon cayenne pepper
  • Salt and black pepper to taste

Instructions

  1. Prep your ingredients: Take the cream cheese out of the fridge about 30 minutes before you start so it softens. Shred the cheddar cheese if you’re using a block. Open your beer and let it sit for a minute—flat beer actually works better for dips because it won’t foam up as much.
  2. Combine the cheeses and cornstarch: In a medium mixing bowl, toss the shredded cheddar and softened cream cheese with the tablespoon of cornstarch. Use your hands or a fork to get the cornstarch evenly distributed.
  3. Add to the slow cooker: Transfer the cheese mixture to your slow cooker. Pour in the beer, then add the ranch seasoning, garlic powder, onion powder, and cayenne if using. Give it a good stir.
  4. Cook on low: Set your slow cooker to low and cook for 2 hours. After 1 hour, give it a stir. The cream cheese should be mostly melted by then. If it looks separated, whisk it vigorously for a minute.
  5. Stir and adjust: After 2 hours, the dip should be smooth, creamy, and a pale golden color. Taste it and add salt and pepper if needed. If the dip seems too thick, stir in a splash more beer or a tablespoon of milk. If it’s too thin, let it cook another 30 minutes uncovered.
  6. Keep warm: Switch the slow cooker to the ‘warm’ setting. This dip can stay on warm for up to 3 hours without issues. Just give it a stir every 30 minutes or so to keep the top from forming a skin.
  7. Serve: Sprinkle with chopped chives or crumbled bacon if you like, and set out your dippers.
