Instructions

  1. Preheat your oven to 375ยฐF (190ยฐC). Line a baking sheet with parchment paper.
  2. Toast the pecans: In a small skillet over medium heat, add the chopped pecans and melted butter. Stir constantly for 3-4 minutes until fragrant and slightly darker. Set aside to cool completely.
  3. Soften the cream cheese: If cold, microwave in 10-second bursts until soft but not hot.
  4. Mix the cheese base: In a large mixing bowl, combine softened cream cheese, shredded cheddar, shredded mozzarella, grated Parmesan, garlic powder, onion powder, smoked paprika, black pepper, and salt (if using). Beat with a hand mixer on medium speed until fully combined and smooth.
  5. Shape the football: Scoop the cheese mixture onto a large piece of plastic wrap. Use the wrap to shape it into a football form (oval with slightly pointed ends). Wrap tightly and twist the ends to secure. Refrigerate for at least 30 minutes, or up to 24 hours.
  6. Unwrap and shape again: Remove the chilled cheese ball from the plastic wrap. Place on the prepared baking sheet. Use your hands to refine the football shape, smoothing out bumps and sharpening the ends.
