These lighter caramel apple nachos use real apples, a cleaner caramel sauce, and a candy crunch that hits all the same notes as the original. It’s one of those recipes where you honestly can’t tell it’s been lightened up.

  • 1 tablespoon fresh lemon juice
  • 1/2 cup canned coconut milk (full-fat)
  • 1/4 cup maple syrup (pure)
  • 2 tablespoons coconut sugar (or brown sugar)
  • 2 tablespoons unsalted butter (or coconut oil for dairy-free)
  • 1 teaspoon vanilla extract
  • Pinch of sea salt (flaky salt like Maldon)
  • 1/2 cup unsweetened coconut flakes
  • 1/4 cup chopped almonds (or pecans, or walnuts)
  • 2 tablespoons coconut sugar
  • 1 tablespoon coconut oil (melted)
  • Pinch of cinnamon (optional)
  • Drizzle of melted dark chocolate (70% or higher, optional)
  • Flaky sea salt (optional)
  • Fresh mint leaves (optional)

Instructions

  1. Preheat your oven to 325°F (160°C). Line a baking sheet with parchment paper.
  2. Make the candy crunch: In a small bowl, combine the coconut flakes, chopped almonds, coconut sugar, melted coconut oil, and cinnamon. Toss everything together until the coconut and nuts are evenly coated. Spread this mixture in a single layer on the prepared baking sheet. Bake for 8-10 minutes, stirring halfway through, until golden brown and fragrant. Let it cool completely on the baking sheet.
  3. While the crunch bakes, make the caramel sauce: In a small saucepan over medium heat, combine the coconut milk, maple syrup, coconut sugar, and butter. Whisk continuously until everything is melted and smooth. Bring it to a gentle simmer, then reduce the heat to low and let it cook for 5-7 minutes, whisking occasionally, until it thickens slightly and coats the back of a spoon. Remove from heat and stir in the vanilla extract and a pinch of sea salt. Set it aside to cool slightly.
  4. Prepare the apples: Core your apples and slice them into thin rounds, about 1/4 inch thick. Place the slices in a large bowl and toss them with the lemon juice.
  5. Assemble the nachos: Arrange the apple slices in a single layer on your serving platter. Drizzle about half the caramel sauce over the apples in a zigzag pattern. Sprinkle half the candy crunch over the top. Add another layer of apples, more caramel, and the remaining crunch.
  6. Add finishing touches: If using, drizzle melted dark chocolate over the top and sprinkle with flaky sea salt. Serve immediately.

Notes

Toast coconut low and slow at 325°F. Don’t skip lemon juice on apples to prevent browning. Whisk caramel constantly to avoid scorching. Let candy crunch cool completely before adding. Slice apples just before serving for best texture. Store components separately if needed.
