  • 1 large bag restaurant-style tortilla chips (about 16 oz)
  • 1 cup sour cream
  • 1 cup guacamole (store-bought or homemade)
  • 1 cup pico de gallo or salsa
  • 1/2 cup pickled jalapeños
  • 1/2 cup black olives, sliced
  • 1/2 cup canned black beans, drained and rinsed
  • 1/2 cup corn kernels (canned or frozen, thawed)
  • 1/4 cup fresh cilantro, chopped
  • 2 green onions, sliced
  • 1 lime, cut into wedges

Instructions

  1. Cook the seasoned beef. Heat a medium skillet over medium-high heat. Add the ground beef and cook, breaking it up with a spatula, until browned, about 6-8 minutes. Drain off any excess fat. Reduce heat to low, add the taco seasoning and water, and stir to combine. Let it simmer for 2-3 minutes until the liquid is absorbed. Set aside and keep warm.
  2. Make the cheese sauce. In a small saucepan, melt the butter over medium heat. Whisk in the flour and cook for 1 minute, stirring constantly. Slowly pour in the milk while whisking continuously to prevent lumps. Cook for 3-4 minutes, stirring often, until the mixture thickens enough to coat the back of a spoon. Remove from heat and stir in the shredded cheddar, smoked paprika, and cayenne. Whisk until smooth and creamy. Season with salt to taste. Keep warm over low heat, stirring occasionally.
  3. Prepare the toppings. While the beef and cheese sauce are cooking, get your toppings ready. Drain and rinse the black beans. Slice the olives. Chop the cilantro and green onions. Cut the lime into wedges. Spoon the sour cream, guacamole, and pico de gallo into small bowls.
  4. Assemble the board. Line your baking sheet or cutting board with parchment paper or foil. Arrange the tortilla chips in a single layer, covering most of the surface. Leave a few gaps for the bowls. Place the bowls of sour cream, guacamole, pico de gallo, and warm cheese sauce in the gaps or around the edges of the board.
