  • ¾ cup (150g) granulated sugar
  • ½ cup (100g) packed light brown sugar
  • 1 can (15 oz / 425g) pumpkin puree (not pumpkin pie filling)
  • ½ cup (120ml) vegetable oil
  • 2 large eggs, at room temperature
  • 2 teaspoons vanilla extract
  • 1 cup (175g) semi-sweet chocolate chips
  • 1 ½ teaspoons ground cinnamon
  • 1 teaspoon pumpkin pie spice
  • 1 teaspoon baking soda
  • ½ teaspoon baking powder
  • ½ teaspoon salt

Instructions

  1. Preheat your oven to 350°F (175°C). Line two 12-cup muffin tins with paper liners.
  2. In a large bowl, whisk together the all-purpose flour, cinnamon, pumpkin pie spice, baking soda, baking powder, and salt. Set aside.
  3. In a separate large bowl, whisk together the granulated sugar and brown sugar until no lumps remain. Add the pumpkin puree, vegetable oil, eggs, and vanilla extract. Whisk until smooth and glossy.
  4. Pour the wet ingredients into the dry ingredients. Use a rubber spatula to gently fold together until just combined. A few small lumps are okay. Do not over-mix.
  5. Fold in the chocolate chips, reserving a handful to sprinkle on top. Give just two or three folds to distribute.
  6. Divide the batter evenly among the 24 muffin cups, filling each about three-quarters full. Sprinkle the reserved chocolate chips on top and press in gently.
  7. Bake for 18 to 22 minutes, or until a toothpick inserted into the center comes out clean or with a few moist crumbs.
  8. Let the muffins cool in the tins for 5 minutes, then transfer to a wire cooling rack to cool completely.

Notes

For best results, use room temperature ingredients and do not over-mix the batter. The muffins taste even better on day two. To freeze, cool completely and store in a freezer-safe bag for up to 3 months.
