This overnight pumpkin french toast bake is the ultimate fall breakfast. With a custardy, spiced pumpkin center and caramelized edges, it’s easy to prep the night before for a stress-free morning.

  • 1 can (15 oz) pumpkin puree
  • 8 large eggs
  • 1 ½ cups whole milk
  • ½ cup heavy cream
  • ¾ cup packed brown sugar
  • 2 teaspoons vanilla extract
  • 2 teaspoons ground cinnamon
  • 1 teaspoon ground ginger
  • ½ teaspoon ground nutmeg
  • ½ teaspoon ground cloves
  • ¼ teaspoon salt
  • 1 loaf (about 16 oz) challah or brioche
  • ¼ cup unsalted butter, melted
  • 2 tablespoons turbinado sugar

Instructions

  1. Cut the loaf of challah or brioche into 1-inch cubes. Spread them evenly in a 9×13-inch baking dish. If bread is fresh, let cubes sit out for 30 minutes to dry slightly.
  2. In a large mixing bowl, whisk together pumpkin puree and eggs until smooth. Add milk, heavy cream, brown sugar, and vanilla extract. Whisk until combined and sugar has mostly dissolved.
  3. Sprinkle in cinnamon, ginger, nutmeg, cloves, and salt. Whisk until spices are fully incorporated.
  4. Slowly pour the custard over the bread cubes, distributing evenly. Gently press bread down so every piece gets soaked.
  5. Cover the dish tightly with plastic wrap or foil. Refrigerate for at least 4 hours, preferably overnight (8-12 hours).
  6. When ready to bake, preheat oven to 350°F. Remove dish from fridge. Remove plastic wrap, brush top with melted butter, and sprinkle turbinado sugar evenly over surface.
  7. Bake for 45-55 minutes, until top is golden brown and center is set but slightly jiggly. A knife inserted in center should come out clean or with a few moist crumbs.
  8. Let bake cool for at least 10 minutes before serving.

Notes

For crispy edges, press some bread cubes slightly up the sides of the baking dish before pouring custard. Don’t over-soak bread (max 30 hours). If top browns too quickly, tent with foil. Let rest 10 minutes before serving for best texture.
