  • 1 medium onion, diced (about 1 cup)
  • 3 celery stalks, diced (about 1 cup)
  • 3 cloves garlic, minced
  • 6 cups (about 12 oz / 340g) crumbled cornbread
  • 2 cups (480ml) low-sodium chicken broth
  • 1 large egg, beaten
  • 2 tbsp (30g) unsalted butter
  • 1 tsp dried sage
  • 1 tsp dried thyme
  • ½ tsp black pepper
  • ½ tsp salt
  • Optional: ½ cup (60g) chopped pecans

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a large skillet over medium-high heat, cook the sausage, breaking it up with a wooden spoon, for 6-8 minutes until browned and slightly crispy. Remove with a slotted spoon and set aside, leaving about 2 tablespoons of drippings in the pan.
  3. Add the butter to the same pan. Once melted, add the diced onion and celery. Cook for 5-6 minutes, stirring occasionally, until softened and translucent. Add the minced garlic and cook for 1 more minute.
  4. While the vegetables cook, spread the crumbled cornbread on a baking sheet and toast in the oven for 5-7 minutes, until lightly golden.
  5. In a large mixing bowl, combine the toasted cornbread, cooked sausage, and sautéed vegetables. Add the sage, thyme, pepper, and salt. Toss gently to mix.
  6. In a small bowl or measuring cup, whisk together the chicken broth and beaten egg. Pour over the cornbread mixture and stir gently until evenly moistened. Let sit for 5 minutes.
  7. Spoon the mixture into a greased 9×13-inch baking dish and spread evenly. If using pecans, sprinkle on top.
  8. Bake for 25-30 minutes, until the top is golden brown and slightly crispy. Let cool for 5 minutes before serving.

Notes

Don’t skip toasting the cornbread—it prevents sogginess. Use day-old cornbread if possible. Cook the sausage until crispy for best flavor. Let the stuffing rest after baking to set.
