  • 1 cup (175g) mini chocolate chips
  • 1 cup (240g) smooth peanut butter
  • Β½ cup (170g) honey
  • β…“ cup (70g) packed brown sugar
  • 1 tsp vanilla extract
  • ΒΌ tsp salt
  • Β½ tsp ground cinnamon (optional)

Instructions

  1. Preheat oven to 350Β°F (175Β°C). Spread rolled oats on a baking sheet and toast for 8-10 minutes, stirring halfway through until lightly golden and nutty.
  2. In a microwave-safe bowl, combine peanut butter, honey, and brown sugar. Heat in 20-second bursts, stirring in between, until melted and smooth (about 1-1.5 minutes). Alternatively, warm gently in a small saucepan over low heat.
  3. Stir vanilla extract, salt, and cinnamon (if using) into the warm peanut butter mixture.
  4. Transfer toasted oats to a large bowl. Add mini chocolate chips and mix gently to distribute evenly.
  5. Pour warm peanut butter mixture over oats and chocolate chips. Fold and mix until oats are well coated and chocolate chips are evenly scattered.
  6. Line an 8×8-inch baking pan with parchment paper, leaving overhang for easy removal. Transfer mixture into pan and press firmly using a spatula or lightly wet hands.
  7. Refrigerate for at least 2 hours or until bars are firm to the touch.
  8. Lift bars out using parchment overhang. Cut into 12 equal bars. Store in an airtight container at room temperature or refrigerate for longer freshness.

Toast the oats to enhance flavor and texture. Warm the peanut butter mixture just enough to melt sugar but avoid overheating. Press the mixture firmly into the pan to prevent crumbling.
