Ingredients

Scale
  • 1 cup (240 ml) cold brew concentrate
  • Ice cubes, as needed
  • 2 tablespoons (30 ml) milk of choice (whole milk or oat milk)
  • 1/4 cup (60 ml) heavy cream
  • 2 tablespoons (30 ml) whole milk
  • 2 tablespoons (30 g) pumpkin puree (100% pure pumpkin)
  • 1/2 teaspoon vanilla extract
  • 1 tablespoon (15 ml) maple syrup
  • 1/4 teaspoon pumpkin pie spice
  • Pinch of salt

Instructions

  1. Make the pumpkin cream base: In a small bowl or liquid measuring cup, combine 1/4 cup heavy cream, 2 tablespoons whole milk, 2 tablespoons pumpkin puree, 1/2 teaspoon vanilla extract, 1 tablespoon maple syrup, 1/4 teaspoon pumpkin pie spice, and a pinch of salt. Whisk gently until fully incorporated and smooth.
  2. Whip the cream mixture: Using a handheld milk frother or whisk, whip the pumpkin cream mixture for 30-45 seconds (60-90 seconds with a whisk) until it thickens slightly and forms soft peaks. Do not overwhip.
  3. Prepare your glass: Fill a tall 16 oz (475 ml) glass with ice cubes. Pour 2 tablespoons of your preferred milk over the ice.
  4. Add the cold brew: Pour 1 cup of cold brew concentrate over the milk and ice, leaving about 1-2 inches of space at the top.
  5. Top with pumpkin cream: Slowly pour the whipped pumpkin cream over the back of a spoon held just above the cold brew to help it float on top.
  6. Finish and serve: Give the drink a gentle stir if desired, or leave it layered. Sprinkle a tiny pinch of pumpkin pie spice on top. Serve immediately.

Notes

Use cold cream for best foam. Don’t skip the pinch of salt—it balances sweetness and enhances pumpkin flavor. If cream sinks, it’s too thin; whip 10-15 seconds more next time. For dairy-free, use full-fat coconut cream and oat milk. Pumpkin cream can be made ahead and stored in the fridge for up to 2 days; re-whip briefly before using.
