These Cozy Birthday Cake Blondies are soft, chewy, and packed with enough sprinkles to make any day feel special. They’re warm, buttery, and taste exactly like a birthday party in a 9×13 pan.

  • ¾ cup (1½ sticks or 170g) unsalted butter, melted and slightly cooled
  • 1 cup (200g) packed light brown sugar
  • ½ cup (100g) granulated sugar
  • 2 large eggs, room temperature
  • 2 teaspoons vanilla extract
  • 2 cups (250g) all-purpose flour
  • 1 teaspoon baking powder
  • ½ teaspoon salt
  • ½ cup (80g) rainbow jimmies sprinkles, plus 2 tablespoons for topping

Instructions

  1. Preheat your oven to 350°F (175°C). Line your 9×13-inch baking pan with parchment paper, leaving some overhang on two sides.
  2. Melt the butter in a medium microwave-safe bowl in 30-second intervals. Let it cool for about 5 minutes.
  3. In a large bowl, whisk together the packed light brown sugar and granulated sugar. Break up any clumps of brown sugar.
  4. Pour the melted butter into the sugar mixture and whisk until smooth. Add the eggs one at a time, whisking well after each addition. Stir in the vanilla extract.
  5. Sift or whisk together the flour, baking powder, and salt. Gradually add the dry ingredients to the wet mixture, stirring with a rubber spatula until just combined. Do not overmix.
  6. Gently fold in ½ cup of rainbow jimmies sprinkles. The batter will be thick and slightly sticky.
  7. Transfer the batter to the prepared pan and spread evenly. Sprinkle the remaining 2 tablespoons of sprinkles on top.
  8. Bake for 20-25 minutes, or until the edges are golden brown and a toothpick inserted in the center comes out with a few moist crumbs. Do not overbake.
  9. Let the blondies cool in the pan on a wire rack for at least 30 minutes. Then use the parchment overhang to lift them out. Cut into squares and serve.

Notes

For best results, use jimmies-style sprinkles (long, rod-shaped) as they hold their color during baking. Do not overmix the batter to avoid tough blondies. Let the blondies cool completely before cutting for clean squares. Store in an airtight container at room temperature for up to 5 days, or freeze for up to 3 months.
