Instructions

  1. Preheat your oven to 350°F (175°C). Position a rack in the center of the oven.
  2. Prepare the apples: Peel, core, and slice apples into 1/4-inch thick slices. Place in a large bowl. Add granulated sugar, brown sugar, lemon juice, cornstarch, cinnamon, nutmeg, and salt. Toss to coat. Set aside.
  3. Brown the butter: In a 10-inch cast iron skillet (or separate saucepan), melt butter over medium heat. Swirl occasionally. After 3-4 minutes, when foam subsides and golden specks appear, remove from heat immediately.
  4. Make the oat crumble: In a medium bowl, whisk together oats, flour, brown sugar, granulated sugar, cinnamon, and salt. Pour hot brown butter over dry ingredients. Stir until moistened and clumps form (like wet sand).
  5. Assemble the crisp: If using a cast iron skillet, pour apples directly into skillet. If using a baking dish, transfer apples to dish. Spread evenly. Take handfuls of crumble, squeeze gently to form clumps, and drop evenly over apples. Do not press down.
  6. Bake: Place dish on a baking sheet. Bake for 40-45 minutes, until filling is bubbly and topping is deep golden brown. If browning too quickly after 30 minutes, tent loosely with foil.
  7. Cool slightly before serving: Let rest on a cooling rack for at least 15 minutes to allow filling to set.
