  • 4 cups low-sodium beef broth
  • 8 ounces cream cheese, softened
  • 2 cups sharp cheddar cheese, shredded
  • 1 medium yellow onion, diced
  • 3 cloves garlic, minced
  • 3 medium Russet potatoes, peeled and diced
  • 1 cup whole milk
  • 2 tablespoons unsalted butter
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon smoked paprika
  • ½ teaspoon salt
  • ½ teaspoon black pepper
  • Optional toppings: crispy bacon bits, sliced green onions, extra shredded cheddar, pickled jalapeños

Instructions

  1. Brown the ground beef in a large skillet over medium-high heat until no longer pink, about 6-8 minutes. Leave about 1 tablespoon of fat in the pan.
  2. Add diced onion to the skillet and cook for 2-3 minutes until softened. Add minced garlic and cook for 30 seconds until fragrant.
  3. Transfer the beef and onion mixture to a 6-quart slow cooker. Add diced potatoes, beef broth, Worcestershire sauce, smoked paprika, salt, and pepper. Stir to combine.
  4. Cook on low for 6-7 hours or on high for 3-4 hours, until potatoes are fork-tender.
  5. About 30 minutes before serving, cut softened cream cheese into cubes and stir into the soup until fully melted and incorporated.
  6. Stir in whole milk and butter until butter is melted and soup is smooth.
  7. Gradually add shredded cheddar cheese, stirring after each addition, until fully melted and soup is thick and creamy. Adjust salt and pepper to taste.
  8. Serve immediately with desired toppings.

Notes

For best results, shred cheese from a block to avoid graininess. Soften cream cheese to room temperature before adding. If soup is too thick, add a splash of warm milk or broth. If too thin, cook uncovered on low for 15-20 minutes. Leftovers keep in the refrigerator for up to 4 days and can be frozen for up to 3 months.
