Cozy Fall Coffee Bar with Easy Pumpkin Spice Syrup

Create a cozy fall coffee bar at home with this easy homemade pumpkin spice syrup. Perfect for lattes, hot chocolate, or chai, this syrup is quick to make and customizable to your taste.

Ingredients

  • 1 cup water
  • 1 cup granulated sugar
  • 1/4 cup pumpkin purée
  • 2 teaspoons pumpkin pie spice
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • Pinch of ground cloves
  • Pinch of salt
  • Freshly brewed coffee or espresso
  • Milk of your choice
  • Whipped cream (optional)
  • Ground cinnamon or pumpkin pie spice for garnish

Instructions

  1. Combine water and sugar in a small saucepan over medium heat. Stir until sugar dissolves, about 2-3 minutes.
  2. Whisk in pumpkin purée, pumpkin pie spice, cinnamon, nutmeg, cloves, and salt until well combined.
  3. Bring to a gentle simmer over medium-high heat. Simmer for 5 minutes, whisking occasionally.
  4. Remove from heat and stir in vanilla extract. Let cool in the pan for 10 minutes.
  5. Optional: Strain through a fine-mesh strainer into a glass jar to remove pumpkin solids.
  6. Cool completely to room temperature before sealing the jar.
  7. Store in the refrigerator for up to two weeks.
  8. To assemble coffee bar: Brew coffee or espresso.
  9. Warm milk on stovetop or microwave until steaming.
  10. Add 2-3 tablespoons of pumpkin spice syrup to a mug.
  11. Pour hot coffee over syrup and stir.
  12. Top with warm milk and foam, then add whipped cream and a sprinkle of cinnamon or pumpkin pie spice.

Notes

The syrup can be made ahead and tastes even better after a day in the fridge. For a sugar-free version, use monk fruit sweetener or allulose. The syrup can also be frozen in ice cube trays for up to three months.
