A customizable baked potato bar featuring fluffy russet potatoes with crispy skins and eight delicious toppings, perfect for casual dinners, gatherings, or solo comfort food nights.

Ingredients

Scale
  • 4 large russet potatoes
  • Olive oil (for rubbing on skins)
  • Coarse sea salt (to season the skins)
  • Shredded sharp cheddar cheese
  • Crispy cooked bacon bits (about 6 slices cooked and crumbled)
  • Sour cream mixed with cottage cheese (Β½ cup sour cream, Β½ cup small-curd cottage cheese blended)
  • Chopped green onions
  • Steamed broccoli florets
  • Fresh diced tomatoes
  • Butter (unsalted, softened)
  • Salt and freshly cracked black pepper

Instructions

  1. Preheat your oven to 425Β°F (220Β°C). Scrub the potatoes under cold water and pat dry thoroughly.
  2. Poke each potato 6 to 8 times with a fork. Rub each potato lightly with olive oil and sprinkle with coarse sea salt.
  3. Place potatoes on a baking sheet and bake for 50 to 60 minutes until a fork or skewer slides in easily.
  4. While potatoes bake, cook bacon until crispy and crumble. Chop green onions, dice tomatoes, and steam broccoli until tender but still bright green.
  5. Blend sour cream and cottage cheese until smooth to make the creamy topping.
  6. Let baked potatoes cool for about 5 minutes. Cut a slit lengthwise on top and gently squeeze sides to fluff the insides.
  7. Set up the potato bar with bowls of shredded cheddar, bacon bits, creamy topping, green onions, broccoli, tomatoes, butter, salt, and pepper for assembling.
  8. Serve immediately while warm.

Notes

For quicker cooking, microwave potatoes for 8-10 minutes then finish in the oven for 10-15 minutes to crisp skins. Keep toppings separate until serving to avoid sogginess. Blend sour cream and cottage cheese fresh before serving for best texture. Use a fork to fluff potatoes gently after cutting. Add smoked paprika to cheese or creamy topping for a smoky twist.
