A quick and comforting 15-minute soup made with leftover rotisserie chicken, vegetables, and noodles. This one-pot meal is perfect for busy weeknights and requires minimal cleanup.

  • 23 cups shredded rotisserie chicken
  • 6 cups low-sodium chicken broth
  • 2 tablespoons butter or olive oil
  • 1 medium yellow onion, diced
  • 2 large carrots, peeled and sliced into half-moons
  • 2 stalks celery, diced
  • 3 cloves garlic, minced
  • 1 teaspoon dried thyme
  • 1 bay leaf
  • 1 cup elbow macaroni or noodles
  • Salt and black pepper to taste
  • 2 tablespoons fresh parsley, chopped
  • 1 teaspoon lemon juice

Instructions

  1. Dice the onion, slice the carrots, chop the celery, and mince the garlic. Set the shredded chicken aside.
  2. Heat butter or oil in a large pot over medium heat. Add onions, carrots, and celery; cook until softened and sweet, about 3-4 minutes.
  3. Add minced garlic and dried thyme; stir constantly for about 60 seconds until fragrant but not brown.
  4. Pour in chicken broth and add the bay leaf. Scrape the bottom of the pot to release stuck bits and bring to a gentle boil.
  5. Add noodles to the boiling broth. Reduce heat to medium-low and simmer for 7-9 minutes or until noodles are tender, stirring occasionally.
  6. Turn off the heat. Stir in the shredded rotisserie chicken to warm through using residual heat.
  7. Add lemon juice, salt, and pepper. Taste and adjust seasoning as needed.
  8. Let the soup sit for a minute to allow flavors to meld. Garnish with fresh parsley before serving.

Notes

If meal prepping, cook noodles separately to prevent them from becoming mushy in the fridge. For a gluten-free version, swap pasta for rice or quinoa. If freezing, leave noodles out and freeze the broth/chicken mixture separately.
