Cozy Pumpkin Gnocchi in Brown Butter Sage Sauce

  • 1 cup pumpkin puree (canned, moisture removed)
  • 1 1/2 to 2 cups all-purpose flour (plus more for dusting)
  • 1 large egg yolk
  • 1/4 cup unsalted butter (for dough)
  • 1/2 cup unsalted butter (for sauce)
  • 1/4 cup fresh sage leaves
  • 1/4 cup finely grated Parmesan cheese
  • 1/4 teaspoon nutmeg
  • Salt and black pepper to taste

Instructions

  1. Spread canned pumpkin puree on a paper towel to remove excess moisture and let sit for 10 minutes.
  2. In a large bowl, combine pumpkin puree, egg yolk, and a pinch of salt. Mix until smooth.
  3. Gradually add flour, about one cup at a time, mixing with a wooden spoon until the dough starts to come together.
  4. Turn dough onto a floured surface and knead gently for 1-2 minutes until soft but not sticky. Do not overwork.
  5. Wrap dough in plastic wrap and rest for 15 minutes.
  6. Cut dough into four pieces. Roll one piece into a snake about one inch thick and cut into half-inch pieces.
  7. Bring a large pot of salted water to a boil. Drop gnocchi in batches and cook until they float (2-3 minutes). Remove with a slotted spoon.
  8. In a skillet over medium heat, melt butter for the sauce. Swirl occasionally until it foams, clears, and turns golden brown/nutty.
  9. Add boiled gnocchi and fresh sage leaves to the brown butter. Toss gently to coat and cook for one minute.
  10. Serve immediately, topped with grated Parmesan and extra sage leaves.

Notes

Ensure pumpkin puree is dry to avoid sticky dough. Do not overwork the dough to keep gnocchi tender. Brown butter burns quickly, so watch closely. For gluten-free, use a 1-to-1 gluten-free flour blend. For dairy-free, substitute butter with olive oil and plant-based butter.
