Ingredients

  • 1 tablespoon maple syrup
  • 1/2 teaspoon pumpkin pie spice
  • 1/2 cup pecans
  • 1/2 cup water crackers or graham crackers
  • Sharp cheddar cheese, cut into cubes or slices
  • Salami or prosciutto, folded or rolled
  • 1 firm apple (Honeycrisp or Granny Smith), sliced
  • 1 tablespoon lemon juice
  • 1/4 cup dried cranberries
  • 1/4 cup pumpkin seeds (pepitas), toasted
  • Maple syrup for drizzling
  • Fresh mint leaves (optional)

Instructions

  1. In a small bowl, mix 1/2 cup pumpkin puree, 1 tablespoon maple syrup, and 1/2 teaspoon pumpkin pie spice until smooth. Adjust sweetness if needed.
  2. Preheat oven to 350°F (175°C). Spread 1/2 cup pecans on a baking sheet and toast for 5-7 minutes until fragrant. Let cool completely.
  3. Toast pumpkin seeds (pepitas) in a dry pan or oven until crunchy. Set aside.
  4. Arrange crackers on a large serving board in a fan shape or stacked slightly overlapping.
  5. Place clusters of sharp cheddar cheese and folded salami or prosciutto around the board.
  6. Place small bowls or ramekins on the board for the pumpkin mixture, cranberries, and pepitas.
  7. Toss apple slices in lemon juice to prevent browning, then arrange them around the board.
  8. Sprinkle toasted pecans and pumpkin seeds over the apples or in small piles.
  9. Scatter dried cranberries loosely for color.
  10. Drizzle a little maple syrup over the apples and nuts. Garnish with mint leaves if desired.

Notes

For best results, assemble the board just before serving to keep crackers crisp and apples fresh. The pumpkin mixture and nuts can be prepared up to a day in advance. To keep apple slices from browning, toss them in lemon juice immediately after slicing. Serve at room temperature for optimal flavor.
