  • 6 large Granny Smith apples, peeled, cored, and sliced into ½-inch wedges
  • ½ cup granulated sugar
  • 2 tablespoons all-purpose flour
  • 1 teaspoon ground cinnamon
  • ¼ teaspoon ground nutmeg
  • 1 teaspoon vanilla extract
  • 1 tablespoon lemon juice
  • 1 cup old-fashioned rolled oats
  • ½ cup chopped pecans
  • ½ cup packed brown sugar
  • ½ cup unsalted butter, melted

Instructions

  1. Peel, core, and slice the apples into ½-inch wedges. Place them in a large mixing bowl.
  2. Sprinkle granulated sugar, flour, cinnamon, nutmeg, and lemon juice over the apples. Toss until evenly coated.
  3. Transfer the apple mixture to the slow cooker pot. Spread evenly and cover. Cook on LOW for 3-4 hours or HIGH for 2-3 hours until apples are tender.
  4. While apples cook, combine rolled oats, chopped pecans, brown sugar, and melted butter in a medium bowl. Stir until the mixture resembles wet sand.
  5. Once apples are tender, remove the lid and sprinkle the oat mixture evenly over the top. Do not stir.
  6. Cover and cook on HIGH for an additional 30-45 minutes until the topping is golden and crisp.
  7. Let the crisp sit for 5-10 minutes before serving to allow the syrup to thicken. Serve warm with ice cream or whipped cream.

Notes

For a gluten-free version, use certified gluten-free oats and a 1:1 gluten-free flour blend. For a dairy-free version, substitute butter with coconut oil or plant-based butter. Avoid using Red Delicious or Gala apples as they may turn to mush. If the syrup is too runny, mix 1 teaspoon cornstarch with 1 tablespoon cold water and stir into apples before adding topping.
