  • 4 tablespoons unsalted butter, melted and slightly cooled
  • 2 tablespoons granulated sugar
  • 3 tablespoons light brown sugar, packed
  • 1 large egg yolk
  • 1/2 teaspoon vanilla extract
  • 2/3 cup all-purpose flour
  • 1/4 teaspoon baking soda
  • 1/4 teaspoon salt, plus a pinch for topping
  • 1/3 cup semi-sweet chocolate chips

Instructions

  1. Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper or a silicone mat.
  2. Melt the butter in a small microwave-safe bowl in 15-second bursts until just melted. Let it cool for 2-3 minutes.
  3. In a medium bowl, whisk together the melted butter, granulated sugar, and brown sugar until smooth. Add the egg yolk and vanilla extract, then whisk vigorously for about 30 seconds until creamy and slightly lighter in color.
  4. In a small bowl, whisk together the flour, baking soda, and salt.
  5. Pour the dry ingredients into the wet mixture. Fold gently with a rubber spatula until just combined (about 10-12 strokes). Add the chocolate chips and fold 3-4 more times until distributed. Do not overmix.
  6. Scoop out 6 equal portions of dough (about 1.5 tablespoons each). Roll into smooth balls and place on the prepared baking sheet, spaced about 2 inches apart. For bakery-style tops, tear each dough ball in half and press the torn sides together before placing on the sheet.
  7. Press a few extra chocolate chips into the tops of each dough ball. Sprinkle a tiny pinch of flaky sea salt over the tops.
  8. Bake on the middle rack for 10-12 minutes. The edges should be golden brown and the centers slightly underdone and puffy.
  9. Let the cookies rest on the baking sheet for 5 minutes, then transfer to a wire rack to cool completely.

Notes

Make sure the melted butter is not hot to avoid cooking the egg yolk. For a chewier texture, chill the dough balls for 10 minutes before baking if your kitchen is warm. The cookies taste even better the next day.
