Ingredients

Scale
  • 10 ounces frozen chopped spinach, thawed and squeezed dry
  • 8 ounces cream cheese, softened
  • 1/2 cup sour cream (plus 1/4 cup for spider web)
  • 1/4 cup mayonnaise
  • 1 cup shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese
  • 2 cloves garlic, minced
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/8 teaspoon cayenne pepper (optional)
  • 1 small black olive (for spider decoration)

Instructions

  1. Preheat oven to 375°F (190°C). Let cream cheese soften at room temperature or microwave for 10 seconds.
  2. Thaw frozen spinach completely. Squeeze dry using a clean kitchen towel or paper towels until no water drips out.
  3. In a medium bowl, mix softened cream cheese, 1/2 cup sour cream, and mayonnaise until smooth. Add garlic, salt, black pepper, and cayenne (if using). Stir.
  4. Fold in squeezed spinach, mozzarella, and Parmesan until evenly distributed. Taste and adjust seasoning if needed.
  5. Grease a 10-inch cast-iron skillet or oven-safe baking dish. Spread dip mixture evenly in the dish.
  6. Bake for 18–22 minutes until edges are bubbly and golden, and center is hot and slightly puffed. Optionally broil 1–2 minutes for deeper color.
  7. Let dip cool 2–3 minutes. Place remaining 1/4 cup sour cream in a piping bag or zip-top bag with a tiny corner snipped. Pipe a spiral from center outward, leaving 1-inch gaps.
  8. Using a toothpick, drag lines from center outward through the spiral every 1.5 inches to create web effect. Wipe toothpick clean between drags.
  9. Place black olive half in the center to resemble a spider. Serve immediately.

Notes

Squeeze spinach thoroughly to avoid watery dip. Let dip cool slightly before piping sour cream web to prevent melting. For best results, use room-temperature cream cheese and sour cream. Dip can be assembled a day ahead (without web) and baked straight from fridge, adding 5–10 minutes to baking time.
