This creamy 3-ingredient pumpkin cold foam turns any regular cup of coffee into something you’d pay five bucks for at a café. It’s quick, easy, and made with simple ingredients like milk, pumpkin puree, and maple syrup.

Ingredients

Scale
  • 1 cup (240 ml) milk (whole milk, oat milk, or 2%)
  • 2 tablespoons (30 g) pumpkin puree (100% pure, not pie filling)
  • 1 tablespoon (15 ml) maple syrup
  • Pinch of pumpkin pie spice or cinnamon (optional)

Instructions

  1. Combine the base: In a small bowl or jar, add 1 cup (240 ml) of cold milk, 2 tablespoons (30 g) of pumpkin puree, and 1 tablespoon (15 ml) of maple syrup. If using the optional spice, add a pinch of pumpkin pie spice now.
  2. Mix until smooth: Use a spoon or a small whisk to stir the pumpkin puree into the milk, breaking up any clumps. This takes about 15 seconds.
  3. Froth the mixture: Submerge a handheld frother into the mixture near the surface. Turn it on and move in slow, circular motions for 30 to 45 seconds until the mixture doubles in volume and becomes thick and creamy. Alternatively, use a countertop frother on the cold foam setting.
  4. Check the consistency: The foam should be light and airy. If too thin, froth for another 10 to 15 seconds. If too thick, add a splash more milk and froth briefly.
  5. Prepare your coffee: Fill a tall glass with ice cubes and pour cold brew or iced coffee over them, leaving about an inch of space at the top.
  6. Pour the foam: Gently spoon or pour the pumpkin cold foam over the back of a spoon onto the coffee so it floats on top.
  7. Finish and serve: Sprinkle a tiny pinch of cinnamon or nutmeg on top for garnish. Serve immediately with a straw.

Notes

Use cold milk for best foam. Mix pumpkin puree into milk before frothing to avoid clumps. For a vegan version, use oat milk. Leftover foam can be stored in the fridge for up to 24 hours and re-frothed briefly.
