Add the smoked paprika, nutmeg, 1 teaspoon salt, and ½ teaspoon pepper. Taste it here—it should be well-seasoned because the pasta will absorb some salt later.
  8. Melt the cheese (2 minutes): Reduce the heat to low. Add the shredded cheddar and Parmesan cheese one handful at a time, stirring gently until each addition melts completely. Don’t rush this—high heat will make the cheese grainy and separated. The sauce should be smooth, thick, and velvety. If it seems too thick, stir in a splash of the reserved pasta water.
