Instructions

  1. Preheat your oven to 400ยฐF (200ยฐC). Peel the butternut squash, cut it in half lengthwise, scoop out the seeds, and cut into 1-inch cubes.
  2. Place the cubed squash on a large rimmed baking sheet. Drizzle with 1 tablespoon olive oil and a pinch of salt and pepper. Toss to coat evenly and spread in a single layer. Roast for 25 to 30 minutes, flipping halfway, until tender and edges are lightly browned.
  3. While the squash roasts, heat 1 tablespoon unsalted butter in a large pot or Dutch oven over medium heat. Add the diced onion and cook for 5 to 6 minutes until soft and translucent. Add the minced garlic and cook for 1 minute until fragrant.
