  • 2 cans (15 ounces each) Great Northern beans, undrained
  • 4 cups low-sodium chicken broth
  • 1 can (4 ounces) diced green chiles
  • 8 ounces cream cheese, softened
  • 1/2 cup heavy cream or half-and-half
  • 1 medium onion, diced
  • 4 cloves garlic, minced
  • 2 teaspoons ground cumin
  • 1 teaspoon chili powder
  • 1 teaspoon dried oregano
  • 1 teaspoon salt (or to taste)
  • 1/2 teaspoon black pepper (or to taste)
  • 1 jalapeño, seeded and minced (optional, for heat)
  • For garnish: fresh cilantro, shredded Monterey Jack cheese, lime wedges, tortilla chips or crumbled bacon (optional)

Instructions

  1. Prep your ingredients: Dice the onion, mince the garlic, and open the cans of beans and green chiles.
  2. Layer the ingredients in the crockpot: Place chicken thighs in the bottom. Add onion, garlic, and green chiles on top. Pour in chicken broth. Do not stir.
  3. Add seasonings: Sprinkle cumin, chili powder, oregano, salt, and pepper over the top. Add jalapeño if using. Do not stir.
  4. Cook: Cover and cook on low for 6-8 hours or on high for 3-4 hours, until chicken is tender.
  5. Shred the chicken: Remove chicken from crockpot, shred with two forks, and return to the pot.
  6. Add creaminess: Add softened cream cheese and heavy cream. Stir gently until cream cheese is fully melted and incorporated.
  7. Final simmer: Let chili simmer on low for 10-15 minutes to meld flavors. Taste and adjust seasoning as needed.
  8. Serve: Ladle into bowls and garnish with desired toppings. Serve hot.

Notes

For best results, use boneless, skinless chicken thighs for tenderness. Soften cream cheese to room temperature to avoid lumps. If chili is too thin, simmer uncovered for 15-20 minutes or mash some beans against the side of the pot to thicken. Garnishes like cilantro, lime, and tortilla chips elevate the dish significantly.
