A quick and easy one-pot creamy garlic parmesan chicken pasta that delivers rich flavor and tender chicken with al dente pasta in about 30 minutes.

Ingredients

Scale
  • 1 pound boneless, skinless chicken breasts, cut into bite-sized pieces
  • 8 ounces uncooked penne pasta
  • 2 tablespoons olive oil
  • 4 cloves minced garlic
  • 3 cups chicken broth
  • 1 cup heavy cream
  • 1 cup freshly grated parmesan cheese
  • 1 teaspoon dried Italian seasoning
  • Salt and freshly ground black pepper to taste
  • Optional garnish: chopped fresh parsley
  • Optional garnish: red pepper flakes

Instructions

  1. Pat the chicken pieces dry with paper towels, then season lightly with salt and pepper. (5 minutes)
  2. Heat 2 tablespoons of olive oil in a large skillet over medium-high heat. Add chicken pieces in a single layer and cook for 4-5 minutes, stirring occasionally, until golden and nearly cooked through. Remove chicken and set aside. (7 minutes)
  3. Reduce heat to medium, add minced garlic to the same pan, and cook for 30 seconds or until fragrant. (1 minute)
  4. Pour in 3 cups chicken broth and 1 cup heavy cream. Stir in dried Italian seasoning and a pinch of salt and pepper. Add uncooked penne pasta, stirring to submerge it in the liquid. (2 minutes)
  5. Bring mixture to a gentle boil, then reduce heat to medium-low and cover with a lid. Cook for 12-15 minutes, stirring occasionally to prevent sticking, until pasta is al dente. Add broth or water if liquid reduces too fast. (15 minutes)
  6. Stir cooked chicken back into the pan. Sprinkle 1 cup freshly grated parmesan cheese over the pasta and gently mix until sauce thickens and coats everything. Adjust salt and pepper if needed. (3 minutes)
  7. Remove from heat and let pasta rest for 2 minutes to thicken. Garnish with chopped fresh parsley and red pepper flakes if desired before serving. (2 minutes)

Notes

Stir occasionally during simmer to prevent pasta from sticking and to thicken sauce evenly. Use freshly grated parmesan for best melting and flavor. Let pasta rest off heat to thicken sauce naturally. Adjust liquid levels as needed during cooking. For dairy-free, substitute heavy cream with coconut or cashew cream and parmesan with nutritional yeast.
