Creamy Garlic Scape Pesto Pasta with Burrata

A quick and easy summer meal featuring a fresh garlic scape pesto tossed with pasta and topped with creamy burrata cheese for a luscious finish.

Ingredients

  • 1 cup garlic scapes, chopped (roughly 100g)
  • 1/4 cup toasted pine nuts or walnuts (35g)
  • 1/2 cup grated Parmesan cheese (50g)
  • 1/2 cup extra virgin olive oil (120ml)
  • 1 teaspoon lemon juice
  • Salt and freshly ground black pepper to taste
  • 12 oz (340g) pasta of your choice (spaghetti, linguine, or orecchiette)
  • Salt for pasta water
  • 1 ball of burrata cheese (about 6 oz / 170g)
  • Extra pine nuts, toasted (optional, for garnish)
  • Fresh basil leaves or microgreens (optional, for garnish)

Instructions

  1. Prepare the pesto: Add chopped garlic scapes and toasted pine nuts into a food processor. Pulse a few times until coarsely chopped, about 15 seconds.
  2. Add grated Parmesan cheese, lemon juice, salt, and pepper to taste. With the processor running, slowly drizzle in olive oil until the mixture becomes creamy and smooth, about 1-2 minutes. Add a tablespoon or two of water or reserved pasta water if too thick.
  3. Cook the pasta: Bring a large pot of salted water to a rolling boil. Add pasta and cook according to package directions until al dente, usually 8 to 10 minutes. Reserve about 1 cup (240ml) of pasta water before draining.
  4. Toss pasta with pesto: Transfer drained pasta to a large bowl or skillet. Add garlic scape pesto and about 1/4 cup (60ml) reserved pasta water. Toss gently but thoroughly to coat every strand. Add more pasta water as needed to create a silky sauce, tossing for 2-3 minutes.
  5. Plate and top: Divide pesto pasta onto serving plates. Tear burrata into chunks and place generously on top. The warmth of the pasta will soften the cheese.
  6. Garnish and serve: Sprinkle extra toasted pine nuts and add fresh basil leaves or microgreens for color and aroma. Serve immediately.

Notes

Toast nuts lightly before blending for enhanced flavor. Do not over-process pesto to maintain texture. Salt pasta water generously. Use reserved pasta water to loosen pesto sauce. Tear burrata by hand to preserve texture. Make pesto just before cooking pasta for freshness. Adjust olive oil quantity slowly to avoid greasy sauce.
