Creamy Grilled Peach Burrata Salad with Honey Balsamic

A delightful summer salad featuring smoky grilled peaches, creamy burrata, peppery arugula, and a tangy honey balsamic dressing. Perfect for a quick weeknight dinner or an impressive starter.

  • 4 ripe but firm peaches, halved and pitted
  • 2 balls fresh burrata cheese (about 4 ounces each), at room temperature
  • 4 cups mixed arugula or spring greens
  • 1/4 cup fresh basil leaves, torn
  • 1/4 cup toasted pine nuts or slivered almonds
  • Flaky sea salt and freshly cracked black pepper
  • 3 tablespoons high-quality balsamic vinegar
  • 2 tablespoons extra virgin olive oil
  • 1 tablespoon honey
  • 1 small clove garlic, minced
  • Pinch of salt and pepper

Instructions

  1. Preheat your grill or grill pan to medium-high heat.
  2. In a small bowl, whisk together balsamic vinegar, olive oil, honey, minced garlic, and a pinch of salt and pepper to make the dressing. Set aside.
  3. Cut peaches in half and remove pits. Brush cut sides lightly with olive oil.
  4. Place peaches cut-side down on the hot grill. Cook undisturbed for 3-4 minutes until char marks appear. Flip and cook for another 1-2 minutes. Remove from grill.
  5. On a serving platter, spread arugula or spring greens in an even layer. Scatter torn basil leaves over the top.
  6. Arrange warm peach halves cut-side up on the greens.
  7. Gently tear burrata into pieces and nestle among the peaches.
  8. Whisk dressing again and drizzle generously over the salad. Sprinkle toasted pine nuts on top. Finish with flaky sea salt and black pepper.
  9. Serve immediately while peaches are warm and burrata is cool.

Notes

For best results, use ripe but firm peaches. Let burrata come to room temperature before serving. Toast nuts in a dry skillet until fragrant. Dressing can be made a day ahead.
