A quick and easy one-pan chicken breast recipe with a creamy sun-dried tomato sauce that is comforting, flavorful, and perfect for busy weeknights.

  • 1 to 1.5 pounds boneless, skinless chicken breasts (preferably thinner or pounded thin)
  • ½ cup sun-dried tomatoes packed in oil (rehydrate if dry)
  • 3 cloves garlic, minced
  • ¾ cup heavy cream (can substitute with coconut cream for dairy-free)
  • ½ cup chicken broth (preferably low sodium)
  • ¼ cup freshly grated Parmesan cheese
  • 2 tablespoons olive oil
  • 1 teaspoon dried Italian herbs (basil, oregano, thyme blend)
  • Salt and black pepper to taste
  • Handful of fresh basil leaves for garnish

Instructions

  1. Place chicken breasts between two sheets of parchment or plastic wrap and gently pound with a meat mallet or rolling pin until about ½ inch thick.
  2. Season both sides of the chicken with salt, pepper, and half of the dried Italian herbs. Let rest for a few minutes.
  3. Heat 2 tablespoons olive oil in a large skillet over medium-high heat until shimmering but not smoking.
  4. Add chicken breasts and cook for 4-5 minutes per side until golden brown and cooked through (internal temperature 165°F). Remove and set aside.
  5. Reduce heat to medium. Add minced garlic to the same pan and sauté for 30 seconds until fragrant.
  6. Add chopped sun-dried tomatoes and cook for 1-2 minutes to release flavor.
  7. Pour in chicken broth and heavy cream, stirring gently and scraping browned bits off the pan bottom. Simmer for 3-4 minutes until slightly thickened.
  8. Stir in grated Parmesan and remaining dried Italian herbs. Adjust seasoning with salt and pepper.
  9. Return chicken breasts to the pan, nestle into the sauce, spoon sauce over the top, and simmer for 2-3 minutes to meld flavors.
  10. Garnish with fresh basil leaves before serving.

Notes

If sauce gets too thick, stir in a splash of chicken broth or cream to loosen. Keep heat medium to prevent cream from separating. Pounding chicken ensures even cooking and juiciness. Use fresh Parmesan for best texture. Can add baby spinach for extra nutrients and color.
