  • 2 tablespoons maple syrup
  • ΒΌ teaspoon salt
  • 1 teaspoon vanilla extract
  • Β½ cup (60 g) chopped walnuts or pecans (optional)
  • 1 tablespoon butter or coconut oil (optional)

Instructions

  1. Peel, core, and dice 1 large apple into small chunks. Measure out 1 cup (170 g) steel cut oats, 3 cups (720 ml) water, and 1 cup (240 ml) almond milk. Have your spices and sweeteners ready.
  2. In the crockpot, add oats, water, almond milk, diced apple, 1Β½ teaspoons ground cinnamon, 2 tablespoons maple syrup, 1 teaspoon vanilla extract, and ΒΌ teaspoon salt. Stir gently to combine.
  3. Cover with the lid and set to low heat. Cook overnight for 7 to 8 hours. If your crockpot runs hot, check after 6 hours to avoid overcooking.
  4. In the morning, check consistency. The oats should be creamy and tender, with the apples softened and fragrant. If too thick, stir in a splash of milk or water until desired creaminess is reached.
  5. Stir in 1 tablespoon butter or coconut oil for richness if desired. Top with chopped walnuts or pecans for crunch.
  6. Serve warm immediately. Refrigerate leftovers in an airtight container for up to 4 days and reheat gently with a splash of milk.

Notes

Do not lift the lid during cooking to maintain heat and texture. For a more caramelized apple flavor, sprinkle brown sugar on top before cooking. Add nuts just before serving to keep them crunchy. Use certified gluten-free oats for gluten-free version. Substitute plant-based milk and skip butter or use coconut oil for vegan option. Adjust maple syrup to reduce sugar if desired.
