These creamy overnight peanut butter banana protein oats are the perfect make-ahead breakfast. They’re thick, naturally sweetened, and packed with protein and fiber to keep you full until lunch.

Ingredients

  • ½ cup (50g) rolled oats
  • 1 medium ripe banana, mashed (about ½ cup or 120g)
  • 2 tablespoons (32g) creamy peanut butter
  • ⅔ cup (160ml) milk of choice
  • ¼ cup (60g) plain Greek yogurt
  • 1 scoop (about 30g) vanilla protein powder (optional)
  • 1 tablespoon (12g) chia seeds
  • 1 tablespoon (15ml) honey or maple syrup (optional)
  • Pinch of salt
  • ½ teaspoon (2ml) vanilla extract

Instructions

  1. Mash the banana in a mason jar or small bowl until smooth with a few tiny lumps.
  2. Add the peanut butter and mix into the mashed banana until well combined.
  3. Pour in the milk and Greek yogurt, then stir or whisk until the peanut butter and banana mixture is fully dissolved.
  4. Add the rolled oats, chia seeds, protein powder (if using), salt, vanilla extract, and honey or maple syrup (if using). Stir until no dry spots remain.
  5. Taste and adjust sweetness or thickness as desired.
  6. Seal the jar and refrigerate for at least 6 hours, preferably overnight (8-12 hours).
  7. In the morning, stir well. If too thick, add a splash of milk. Top with sliced banana, a drizzle of peanut butter, chia seeds, or chocolate chips. Serve cold or let sit at room temperature for 10 minutes.

Notes

For best texture, use rolled oats (not quick or steel-cut). Mash the banana thoroughly to distribute sweetness. Chia seeds are essential for thickening. Protein powder is optional but adds staying power. The flavors improve on day 2 and 3.
