Instructions

  1. Preheat oven to 350°F (175°C). Line a 9×9-inch baking pan with parchment paper, leaving overhang on two sides. Lightly grease parchment.

  6. Make the cheesecake swirl: In a separate bowl, beat 8 ounces softened cream cheese with ¼ cup granulated sugar until smooth. Add 1 egg and 1 teaspoon vanilla, beat until just combined. Mix in 2 tablespoons sour cream. Do not overbeat.
  7. Assemble: Pour pumpkin mixture over pre-baked crust. Drop spoonfuls of cheesecake mixture randomly on top. Use a knife or toothpick to gently swirl in figure-eight motions, about 5-6 passes.
  8. Bake at 350°F (175°C) for 35-40 minutes until edges are set but center jiggles slightly. Tent with foil if browning too quickly.
