  • 2 tablespoons tomato paste
  • 4 cups low sodium chicken broth
  • 3/4 cup natural peanut butter (smooth or chunky)

  • 1 teaspoon smoked paprika
  • Salt and black pepper to taste
  • A handful of fresh cilantro or parsley, chopped (optional garnish)
  • 1 tablespoon fresh lime juice

Instructions

  1. Prepare the Ingredients (10 minutes): Peel and dice the sweet potatoes into roughly 1-inch cubes. Chop the onion finely, mince the garlic, and grate the ginger. Cut chicken into bite-sized pieces.
  2. Sauté Aromatics (Optional, 5-7 minutes): In a skillet over medium heat, add a tablespoon of oil and sauté the onions until translucent, about 3-4 minutes. Add garlic and ginger, cooking for another 1-2 minutes until fragrant. Skip if short on time.
  3. Load the Slow Cooker (5 minutes): Transfer the sautéed aromatics (or raw onion, garlic, and ginger if skipping step 2) into the slow cooker. Add diced sweet potatoes, chicken, tomato paste, cumin, smoked paprika, crushed red pepper flakes, salt, and pepper. Pour in 4 cups of chicken broth.
  4. Cook Low and Slow (6-8 hours): Cover and cook on low for 6-8 hours, or on high for 3-4 hours, until chicken is tender and sweet potatoes are soft but not mushy.
  5. Incorporate Peanut Butter (10 minutes): About 30 minutes before serving, stir in 3/4 cup natural peanut butter until fully melted and integrated. Taste and adjust seasoning as needed.
  6. Finish with Lime and Herbs (2 minutes): Just before serving, stir in 1 tablespoon fresh lime juice and sprinkle with chopped cilantro or parsley.

Notes

Use chicken thighs for juicier meat; add peanut butter in the last 30 minutes to avoid graininess. Fresh lime juice brightens the soup at the end. If soup is too thick, add broth or water; if too thin, reduce with lid off for 15 minutes. Natural peanut butter without added sugar or oils is best for authentic flavor.
