  • 2 medium Bosc pears (or Asian pears)
  • 2 Fuyu persimmons (optional)
  • 1/2 cup pomegranate arils
  • 1/4 cup fresh lime juice
  • 3 tablespoons raw honey (or maple syrup for vegan)
  • 1/4 cup fresh mint leaves, chopped
  • 1/8 teaspoon sea salt

Instructions

  1. Wash all fruit thoroughly and pat dry. Peel apples and pears if desired, then cut into 1/2 inch uniform cubes. If using persimmons, remove skin and cube similarly.
  2. In a small bowl, whisk together fresh lime juice, raw honey, and sea salt until the honey is completely dissolved and the mixture is smooth.
  3. Place the cut fruit into a large mixing bowl. Sprinkle pomegranate arils over the top.
  4. Pour the honey lime dressing over the fruit. Gently toss with a large spoon or spatula for 30-60 seconds to coat evenly without crushing the fruit.
  5. Sprinkle chopped fresh mint leaves over the salad and give one final gentle toss.
  6. Serve immediately or chill in the refrigerator for 15 minutes to let flavors meld. Bring to room temperature before serving for best flavor.

Notes

Use firm apples and pears to maintain crispness. Do not over-toss to prevent mushiness. Add mint just before serving to keep color vibrant. If honey is crystallized, warm it slightly before mixing. Store leftovers in an airtight container for up to 24 hours.
