  • 1 lb sirloin or ribeye steak, cut into 1-inch cubes
  • 1.5 lbs Yukon Gold potatoes, cut into 1-inch cubes
  • 3 tablespoons unsalted butter
  • 45 cloves garlic, minced
  • 2 tablespoons avocado oil or grapeseed oil (divided)
  • 1.5 teaspoons kosher salt (divided)
  • 0.75 teaspoons freshly cracked black pepper (divided)
  • 0.5 teaspoon smoked paprika (optional)

Instructions

  1. Pat the steak cubes completely dry with paper towels. Toss with 1 teaspoon salt, 1/2 teaspoon black pepper, and 1/2 teaspoon smoked paprika. Set aside.
  2. Toss the potato cubes with 1 tablespoon oil, 1/2 teaspoon salt, and 1/4 teaspoon black pepper until evenly coated.
  3. Heat a large 12-inch skillet over medium-high heat. Add 1 tablespoon oil and wait until it shimmers and just starts to smoke.
  4. Add steak cubes in a single layer (cook in batches if necessary). Sear for 2 minutes without moving to develop a crust.
  5. Flip steak and cook for another 2 minutes until browned but still rare to medium-rare. Remove steak from pan and set aside on a plate.
  6. Add potatoes to the same pan with the leftover beef fat. Spread in a single layer and cook for 5 minutes without stirring.
  7. Stir potatoes and cook for another 5 minutes until tender and golden brown.
  8. Reduce heat to medium. Add butter to the pan with potatoes. Once melted, add minced garlic and stir constantly for 1 minute until fragrant.
  9. Return steak and any accumulated juices to the pan. Toss everything together for 1 minute to coat in garlic butter.
  10. Taste and adjust seasoning with more salt if needed. Serve immediately.

Notes

Ensure steak and potatoes are patted completely dry before cooking to ensure proper searing and crispiness. Do not overcrowd the pan, as this causes steaming instead of browning. If using frozen steak, thaw completely and dry thoroughly. For dairy-free, swap butter for ghee or plant-based oil.
