  • 1 cup Whole Milk
  • 1 teaspoon Dijon Mustard
  • ยฝ teaspoon Garlic Powder

Instructions

  1. In a large mixing bowl, combine warm water and sugar. Sprinkle yeast over the top and let sit for 5-10 minutes until foamy.
  2. Add melted butter and beaten egg to the yeast mixture. Stir to combine.
  3. Gradually add flour and caraway seeds, mixing until a shaggy dough forms.
  4. Turn dough onto a lightly floured surface and knead for 5-7 minutes until smooth and elastic.
  5. Place dough in a greased bowl, cover with a damp towel, and let rise in a warm place for 30 minutes.
  6. While dough rises, bring a large pot of water to a boil, then reduce to a simmer.
  7. Punch down risen dough and divide into 12 equal pieces. Roll each into a ball.
  8. Carefully drop dough balls into the simmering water. Boil for 30 seconds on each side.
  9. Remove pretzels with a slotted spoon and place on a parchment-lined baking sheet.
  10. Brush boiled pretzels with remaining egg wash and sprinkle generously with coarse sea salt.
  11. Bake at 425ยฐF (220ยฐC) for 12-15 minutes until deep golden brown. Let cool for 5 minutes.
  12. In a small saucepan, melt 2 tablespoons butter over medium heat. Whisk in 2 tablespoons flour and cook for 1 minute.
  13. Slowly whisk in milk and beer, stirring constantly until thickened.
  14. Add grated cheese, mustard, and garlic powder. Stir until cheese is melted and smooth.
  15. Serve warm pretzel bites with the hot beer cheese sauce on the side.

For extra crispiness, boil the pretzels twice. Do not skip the boiling step as it sets the crust. Use freshly grated cheese for the sauce to ensure smooth melting, as pre-shredded cheese contains anti-caking agents. Keep the cheese sauce heat low to prevent seizing. Leftover pretzels can be frozen unbaked after boiling; bake directly from frozen, adding 2-3 minutes to baking time.
