Instructions

  1. Preheat oven to 425Β°F (220Β°C). Line a baking sheet with parchment paper or a silicone baking mat.
  2. Slice zucchinis into sticks about 3 inches long and 1/2 inch thick. Place in a colander, sprinkle with 1 teaspoon salt, and let sit for 10 minutes to draw out moisture.
  3. Pat zucchini sticks dry thoroughly with paper towels or a kitchen towel.
  4. In a shallow bowl, combine breadcrumbs, grated Parmesan, garlic powder, onion powder, 1/2 teaspoon salt, and black pepper. Mix well.
  5. In another bowl, beat the eggs until smooth.
  6. Dip each zucchini stick into the egg mixture, letting excess drip off, then dredge in the breadcrumb mixture, pressing gently to adhere. Place coated fries on the prepared baking sheet.
