These quick and easy cookies feature crisp edges, chewy centers, and pockets of gooey salted caramel. Perfect for busy weeknights or gifting, they require no overnight chilling and come together in under 15 minutes.

  • 1 cup Unsalted Butter, softened
  • 1 cup Granulated Sugar
  • 1 cup Light Brown Sugar
  • 2 large Eggs, room temperature
  • 2 teaspoons Vanilla Extract
  • 1 teaspoon Baking Soda
  • 1 teaspoon Salt (fine sea salt)
  • 2 cups Semi-Sweet Chocolate Chips
  • 1/2 cup Caramel Sauce
  • Flaky Sea Salt (for sprinkling)

Instructions

  1. Preheat oven to 350°F (175°C). Line two large baking sheets with parchment paper or silicone mats.
  2. In a medium bowl, whisk together the flour, baking soda, and salt. Set aside.
  3. In a large bowl, beat the softened butter, granulated sugar, and brown sugar together until light and fluffy (about 3-4 minutes).
  4. Beat in the eggs one at a time, followed by the vanilla extract. Mix until just combined.
  5. Gradually add the dry ingredients to the wet mixture. Mix on low speed until just combined. Do not overmix.
  6. Stir in the chocolate chips by hand using a spatula, reserving a small handful for topping.
  7. Scoop tablespoon-sized balls of dough onto the prepared baking sheets, spacing them about 2 inches apart.
  8. Drizzle a small amount of caramel sauce over each cookie. Sprinkle with reserved chocolate chips and a pinch of flaky sea salt.
  9. Bake for 10-12 minutes, or until edges are golden brown and centers look slightly soft. Rotate pans halfway through.
  10. Let cookies cool on the baking sheet for 5 minutes, then transfer to a wire rack to cool completely.

Notes

For chewier cookies, use more brown sugar and less granulated sugar. If the caramel is too runny, chill it before drizzling. Cookies can be stored in an airtight container at room temperature for up to 5 days, or frozen for up to 3 months. Dough balls can also be frozen and baked directly from frozen, adding 1-2 minutes to baking time.
