Delicata Squash: Easy Crispy Roasted Recipe

Crispy roasted delicata squash with a sweet and spicy maple chili glaze. This easy side dish is perfect for busy weeknights and holiday gatherings.

  • 2 medium delicata squash, halved lengthwise and seeded
  • 2 tablespoons olive oil
  • 1 teaspoon sea salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon garlic powder
  • 3 tablespoons pure maple syrup
  • 1 tablespoon sriracha sauce
  • 1 teaspoon apple cider vinegar
  • 1 tablespoon unsalted butter
  • 1/4 teaspoon red pepper flakes (optional)

Instructions

  1. Preheat oven to 400°F (200°C).
  2. Wash squash, cut in half lengthwise, and scoop out seeds.
  3. Place squash halves cut-side up on a rimmed baking sheet.
  4. Drizzle with olive oil and sprinkle with salt, pepper, and garlic powder. Rub seasoning into the flesh.
  5. Roast for 20 minutes.
  6. While squash roasts, combine maple syrup, sriracha, apple cider vinegar, butter, and red pepper flakes in a small saucepan. Heat over medium heat until butter melts and mixture is smooth.
  7. Remove squash from oven and brush generously with the glaze.
  8. Return to oven and roast for another 10-15 minutes until glaze is caramelized and bubbly.
  9. Let cool for a few minutes before serving.

Notes

If the squash is hard to cut, microwave it for 1-2 minutes to soften. Do not add the glaze too early or the sugar will burn. Space squash halves out on the pan to ensure crispiness. For extra crispiness, broil for the last 1-2 minutes, watching closely.
