A simple, crowd-pleasing mimosa bar made with apple cider, sparkling wine, and cinnamon sticks. Perfect for last-minute brunches, holiday gatherings, or cozy weekends.

  • 4 cups (950 ml) apple cider, chilled
  • 2 cups (475 ml) sparkling wine or champagne (dry Prosecco or Cava), chilled
  • 6 to 8 cinnamon sticks, for garnish
  • 1 apple (Honeycrisp or Granny Smith), thinly sliced (optional)
  • Honey or maple syrup, to taste (optional)
  • Fresh rosemary sprigs (optional)
  • Star anise pods (optional)

Instructions

  1. Chill the apple cider and sparkling wine thoroughly (overnight for cider, at least 2 hours for wine).
  2. Slice the apple into thin rounds or half-moons. Arrange cinnamon sticks, apple slices, rosemary sprigs, and other garnishes on a small tray.
  3. In a large pitcher, combine 4 cups chilled apple cider with 2 cups chilled sparkling wine. Stir gently with a long spoon to avoid losing bubbles.
  4. Taste and adjust sweetness with honey or maple syrup if desired, or add a squeeze of lemon for more tartness.
  5. Fill each glass about two-thirds full with the cider mixture. Add a cinnamon stick, apple slices, and a rosemary sprig if using.
  6. Serve immediately while bubbles are lively. For a self-serve bar, keep the pitcher in the fridge and let guests top off their glasses with extra sparkling wine.

For best results, use dry sparkling wine (Prosecco or Cava) to balance the sweetness of the cider. Chill all ingredients thoroughly before mixing to preserve bubbles. Garnishes like cinnamon sticks and rosemary add flavor, not just decoration. For a non-alcoholic version, substitute sparkling apple cider or non-alcoholic sparkling wine.
