  • 1 pound ground turkey (93/7 lean-to-fat ratio)
  • 1/2 cup plain breadcrumbs
  • 1 large egg, lightly beaten
  • 1/4 cup grated onion (with juices)
  • 2 cloves garlic, minced
  • 1 teaspoon dried oregano
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/4 cup grated Parmesan cheese
  • 2 tablespoons milk (any kind, including plant-based)
  • 12 slider buns (such as Martin’s Potato Rolls)
  • 1 cup marinara sauce
  • 8 slices provolone cheese (or mozzarella)
  • 2 tablespoons melted butter
  • 1 teaspoon garlic powder
  • 1/2 teaspoon dried parsley

Instructions

  1. Preheat oven to 400°F (200°C). Line a rimmed baking sheet with parchment paper.
  2. Grate a quarter of a medium onion on the large holes of a box grater to get about 1/4 cup of grated onion with juices. Do not drain the juices.
  3. In a large bowl, combine ground turkey, breadcrumbs, beaten egg, grated onion with juices, minced garlic, oregano, salt, pepper, Parmesan cheese, and milk. Mix gently with your hands until just combined. Do not overmix.
  4. Using a small cookie scoop or your hands, form the mixture into 12 evenly sized meatballs (about 1.5 inches in diameter). Place on prepared baking sheet, spacing about 1 inch apart.
  5. Bake meatballs for 15-18 minutes until cooked through and slightly golden. Internal temperature should reach 165°F (74°C).
  6. While meatballs bake, arrange bottom halves of slider buns in a 9×13-inch baking dish or on a separate baking sheet, close together.
  7. Once meatballs are done, place one meatball on each bun bottom. Spoon about 1 tablespoon of marinara sauce over each meatball. Top with a piece of provolone cheese (tear slices in half to fit). Place bun tops on.
  8. In a small bowl, mix melted butter with garlic powder and dried parsley. Brush this mixture over the tops of the slider buns.
  9. Cover dish with aluminum foil and bake for 10 minutes. Remove foil and bake for another 5 minutes until cheese is melted and bun tops are golden and slightly crispy.
  10. Let sliders rest for 2-3 minutes before serving.

Don’t skip the grated onion—it keeps the turkey moist. Use a light hand when mixing to avoid tough meatballs. Let meatballs rest before assembling. For extra texture, toast the cut sides of buns under the broiler before assembling. Watch the cheese during the final bake to prevent burning. Leftover assembled sliders can be stored in the refrigerator for up to 3 days. Reheat in oven at 350°F for 8-10 minutes covered with foil. Baked meatballs can be frozen for up to 3 months.
