  • 3 tablespoons olive oil
  • 2 tablespoons fresh lemon juice (about 1 lemon)
  • 3 cloves garlic, minced
  • 1 teaspoon dried oregano
  • 1 teaspoon paprika
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • 1 cup dry brown rice (or white rice, quinoa, or cauliflower rice)
  • 2 cups broccoli florets
  • 1 red bell pepper, sliced
  • 1 medium zucchini, chopped
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 cup cherry tomatoes, halved
  • ¼ cup olive oil
  • 2 tablespoons fresh lemon juice
  • 1 teaspoon Dijon mustard
  • 1 teaspoon honey (or maple syrup for vegan)
  • ½ teaspoon dried basil
  • Salt and pepper to taste

Instructions

  1. In a medium bowl, whisk together 3 tablespoons olive oil, 2 tablespoons lemon juice, minced garlic, oregano, paprika, salt, and pepper. Add chicken thighs and turn to coat evenly. Cover and marinate in the fridge for at least 15 minutes (up to 4 hours).
  2. Rinse 1 cup brown rice under cold water until water runs clear. Add rice and 2 cups water to a medium saucepan. Bring to a boil, reduce heat to low, cover, and simmer for 30-35 minutes (15-18 minutes for white rice). Remove from heat, let sit covered for 5 minutes, then fluff with a fork.
  3. Preheat oven to 400°F (200°C). On a large baking sheet, toss broccoli, bell pepper, zucchini, and cherry tomatoes with a drizzle of olive oil, salt, and pepper. Spread in a single layer. Roast for 20-25 minutes, flipping halfway, until edges are charred and vegetables are tender.
  4. Heat a large skillet or grill pan over medium-high heat with a drizzle of oil. Cook marinated chicken thighs for 5-6 minutes per side, until internal temperature reaches 165°F (74°C) and outside is golden brown. Let rest for 5 minutes before slicing.
  5. In a small bowl or mason jar, combine ¼ cup olive oil, 2 tablespoons lemon juice, Dijon mustard, honey, dried basil, and a pinch of salt and pepper. Whisk or shake until emulsified. Adjust seasoning to taste.
  6. Divide cooked rice evenly among four meal prep containers. Top each with roasted vegetables, black beans, and sliced chicken. Drizzle lemon-herb dressing over everything. Seal containers and refrigerate for up to 4 days.

Notes

Keep dressing separate until ready to eat to prevent rice from getting soggy. Let chicken rest for 5 minutes before slicing to keep it juicy. Cool components completely before refrigerating to avoid condensation. The flavors improve after a day or two.
