This Easy Candy Corn Popcorn Bark is a quick, forgiving, and endlessly customizable fall treat. It combines buttery popcorn, sticky candy corn, and a drizzle of white chocolate for a sweet and salty crunch that’s perfect for gatherings or cozy nights in.

  • 10 cups popped popcorn (about 1/2 cup unpopped kernels or one standard bag of microwave popcorn)
  • 1 cup candy corn
  • 1 1/2 cups white chocolate chips
  • 1 tablespoon coconut oil or vegetable oil
  • 1/4 teaspoon salt (flaky sea salt preferred)
  • Optional: 1/2 cup dried cranberries or chopped pretzels

Instructions

  1. Prepare the popcorn. Pop your kernels using your preferred method. If using microwave popcorn, let it cool for 2 minutes, then open the bag carefully. Remove any unpopped kernels. Spread the popcorn on the prepared baking sheet in an even layer. Let it cool completely (about 5 minutes).
  2. Line the baking sheet. Place a sheet of parchment paper on your baking sheet, letting it hang over the edges slightly for easy removal. If using a silicone mat, place it directly on the sheet.
  3. Add the candy corn. Sprinkle the candy corn evenly over the popcorn. Gently toss the popcorn and candy corn with your hands to distribute, being careful not to crush the popcorn.
  4. Melt the white chocolate. Place the white chocolate chips and coconut oil in a microwave-safe bowl. Microwave in 30-second intervals, stirring after each, until smooth and glossy (about 1.5 to 2 minutes total).
  5. Drizzle the chocolate. Using a spoon or spatula, drizzle the melted white chocolate over the popcorn and candy corn, covering as much surface area as possible. Use the back of the spoon to spread it gently. Work quickly as the chocolate starts to set within a minute.
  6. Sprinkle with salt. While the chocolate is still wet, sprinkle the flaky sea salt over the top.
  7. Let it set. Place the baking sheet in the refrigerator for 15 to 20 minutes until the bark is firm to the touch.
  8. Break into pieces. Once set, lift the parchment paper out of the pan. Break the bark into irregular chunks. Store in an airtight container.

Notes

Use room temperature popcorn to prevent chocolate from seizing. Work in a cool kitchen for best results. Break the bark while it’s cold for clean pieces. This bark tastes even better the next day as flavors meld. For a dairy-free version, use dairy-free white chocolate chips and coconut oil.
