  • 1 tablespoon granulated sugar
  • 2 ¼ teaspoons active dry yeast (1 packet)
  • 3 ½ cups all-purpose flour
  • 1 teaspoon fine sea salt
  • 2 tablespoons unsalted butter, melted and slightly cooled
  • 6 cups water (for baking soda bath)
  • ⅓ cup baking soda
  • ½ cup unsalted butter, melted (for coating)
  • ¾ cup granulated sugar (for coating)
  • 2 tablespoons ground cinnamon
  • Pinch of salt (for coating)

Instructions

  1. Activate the yeast: In a large mixing bowl, combine the warm water and granulated sugar. Sprinkle the yeast on top and let it sit for 5-7 minutes until frothy and bubbly.
  2. Make the dough: Add the flour, salt, and melted butter to the yeast mixture. Stir with a wooden spoon until a shaggy dough forms. Turn it out onto a lightly floured surface and knead for 6-8 minutes until smooth and elastic.
  3. First rise: Place the dough in a lightly greased bowl, cover with a clean kitchen towel or plastic wrap, and let it rise in a warm spot for 30-45 minutes until doubled in size.
  4. Preheat and prepare: Preheat your oven to 425°F (220°C). Line a baking sheet with parchment paper. In a large pot, bring 6 cups of water to a boil, then carefully stir in the baking soda.
  5. Shape the bites: Punch down the risen dough and turn it onto a lightly floured surface. Divide into 4 equal pieces. Roll each piece into a long rope about 12 inches long and 1 inch thick. Cut each rope into 1-inch pieces.
  6. The baking soda bath: Reduce the boiling water to a gentle simmer. Working in batches of 6-8 pieces, carefully drop the pretzel bites into the water bath using a slotted spoon. Let them simmer for 30-45 seconds. Remove and transfer to the prepared baking sheet, spacing them about 1 inch apart.
  7. Bake: Bake the pretzel bites for 12-15 minutes until deep golden brown and slightly puffed.
  8. First butter bath: As soon as the pretzel bites come out of the oven, brush them generously with melted butter.
  9. Make the coating: In a shallow bowl, whisk together the sugar, cinnamon, and pinch of salt. While the pretzel bites are still warm, toss them in the cinnamon sugar mixture until evenly coated.
  10. Second butter bath (the secret step): After the first coating, brush them with another thin layer of melted butter, then toss them in the cinnamon sugar one more time.

Notes

Don’t skip the baking soda bath—it gives pretzels their signature chew and color. Work quickly with the butter while the bites are still warm for best coating. For a dairy-free version, use vegan butter. For a lower-sugar option, reduce the cinnamon sugar coating by half.
