These Easy Cranberry Brie Bites in Puff Pastry are the perfect last-minute holiday appetizer. With just four ingredients and under 30 minutes, you can create golden, flaky bites with creamy brie and sweet-tart cranberry sauce that will disappear at any gathering.

  • 1 package (17.3 ounces, about 2 sheets) puff pastry, thawed
  • 8 ounces brie cheese, cold
  • ½ cup cranberry sauce (canned whole-berry preferred)
  • 1 large egg, beaten with 1 tablespoon water (for egg wash)
  • Fresh rosemary or thyme sprigs (optional, for garnish)
  • Flaky sea salt (optional, for sprinkling)

Instructions

  1. Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper and set aside.
  2. Thaw the puff pastry at room temperature for about 30-40 minutes, or until pliable but still cold. Alternatively, microwave on defrost setting for 10-15 seconds at a time.
  3. Cut the brie into ½-inch cubes. Keep cold.
  4. On a lightly floured surface, gently roll each puff pastry sheet into a 12×12-inch square.
  5. Using a sharp knife or pizza cutter, cut each sheet into 9 equal squares (3 rows by 3 rows) to make 18 squares total.
  6. Place the pastry squares on the prepared baking sheet, about 1 inch apart.
  7. Place one cube of brie in the center of each pastry square.
  8. Spoon about 1 teaspoon of cranberry sauce on top of each brie cube. Spread slightly, but avoid touching the edges of the pastry.
  9. Gently bring two opposite corners of each pastry square to the center, overlapping slightly. Press lightly to seal. Alternatively, bring all four corners together like a bundle.
  10. Brush the tops of each pastry bundle with the egg wash.
  11. Bake for 15-18 minutes, until the pastry is puffed and golden brown and the brie is melted and bubbly.
  12. Let the bites cool on the baking sheet for 5 minutes before serving. Garnish with fresh rosemary or thyme sprigs and a sprinkle of flaky sea salt if desired.

Notes

Keep puff pastry cold for best flakiness. Use thick cranberry sauce to prevent sogginess. For gluten-free, use certified gluten-free puff pastry. For dairy-free, use plant-based brie. Can be assembled up to 24 hours ahead and refrigerated. Freeze unbaked bites for up to a month.
