  • 1.5 lbs (680g) boneless, skinless chicken breasts
  • 8 oz (226g) cream cheese, softened and cubed
  • 1 cup (240ml) buffalo hot sauce (like Frank’s RedHot)
  • 1 packet (1 oz or 28g) ranch seasoning mix
  • 1 cup (120g) shredded cheddar cheese
  • 1/2 cup (60g) crumbled blue cheese (optional)
  • 1/4 cup (60ml) milk

Instructions

  1. Place the chicken breasts in the bottom of a 6-quart slow cooker.
  2. Cube the softened cream cheese into 1-inch chunks and scatter over the chicken.
  3. Pour the buffalo hot sauce over the chicken and cream cheese.
  4. Sprinkle the ranch seasoning mix evenly over the top.
  5. Cover and cook on LOW for 3-4 hours, or on HIGH for 1.5-2 hours, until the chicken is tender.
  6. Shred the chicken directly in the slow cooker using two forks.
  7. Stir in the shredded cheddar cheese, crumbled blue cheese (if using), and milk until melted and smooth.
  8. Cover and cook on LOW for another 15-20 minutes until hot and bubbly. Stir before serving.

Notes

For best results, use full-fat cream cheese and soften it before cubing. The dip will thicken as it cools; stir in a splash of milk to thin if needed. Serve directly from the crockpot set to WARM.
