Instructions

  1. In a small mixing bowl, whisk together the honey, low-sodium soy sauce, and minced garlic until well combined.
  2. Place the chicken thighs in a single layer at the bottom of a 6-quart or larger slow cooker.
  3. Pour the honey-garlic mixture evenly over the chicken thighs, making sure each thigh gets a little coating.
  4. Cover the slow cooker and cook on LOW for 4-5 hours, or on HIGH for 2-3 hours, until the chicken is cooked through and easily shreds with a fork (internal temperature should reach 165ยฐF).
  5. Use tongs to carefully transfer the cooked chicken thighs to a plate and cover loosely with foil to keep warm.
